- 4 ounces olives or sun-dried tomatoes packed in oil, cut into strips
- 1 cup cucumbers, peeled and diced
- 2 tablespoons fresh basil, chopped
- 3 to 4 cloves garlic, minced
- 2 tablespoons balsamic vinegar
- 1 15-ounce can low-sodium garbanzo beans, drained and rinsed
Instructions
- Combine all ingredients in a small serving dish. Toss gently to mix.
