Savory Breakfast Shake


1 to 2 servings (1 serving = ¼ to 1/2 cup)


  • cooking spray
  • 4 egg whites
  • 2 tablespoons low- or reduced-fat shredded cheese, melted
  • 1/4 cup cooked spinach or other preferred vegetable


  1. Lightly coat skillet with cooking spray and place over medium-high heat. Pour egg whites into skillet and cook to desired firmness.
  2. Place cooked eggs, cheese, and cooked spinach into a blender. Cover and process until well blended. Consistency of smoothie should be liquid and able to go through a straw (but don’t use a straw), no chunks. Strain if needed.
